Many of you will already have seen the wonderful drawings that David Gurdon doodles for us here at twool, well for the past 3 years we have chosen a weekend in January to all get together and make Marmalade. There’s nothing quite like the taste of delicious homemade Marmalade spread thickly on hot buttered toast…
It’s a fiddly job but with friends, snow outside, lots of lovely Princetown brewery Jail ale, Seville oranges, jars and sugar, we’re ready… let’s get chopping!
Here is the Women’s Institute recipe tried tested and works beautifully…
Makes about 10lbs of marmalade
3lb Seville oranges
2 lemons
5 pints of water
6lb sugar
Wash and scrub the oranges and lemons. Cut the fruit in half and squeeze out the juice into a separate bowl.
Scoop out all the pulp and put the pips and pulp into a muslin bag.
Cut up all the orange and lemon peel into little pieces depending on whether you like it chunky or fine.
Take a large preserving pan add the juice, peel and water and the muslin bag containing the pulp and pips, bring to the boil and simmer for 2 hours.
Remove the muslin bag and squeeze it hard to remove all the gooey liquid (rubber gloves a must as it will be hot!!)
Add the sugar stir until fully dissolved bring to the boil and boil rapidly until a set is reached.
Remove scum and leave to settle for 10mins give it a good stir bottle and label! Yum…
